Recipe: Easy to Make Ropa Vieja

Let me start by saying Del Real Foods is a lifesaver for this working mom. Their fully-cooked authentic Mexican meals, like Carnitas and Pollo Asado, are easy to make, delicious and nutritious. You can get them in the refrigerated (not frozen) section of your grocery. For under $10, a box of your favorite Mexican staple whether it be Shredded Chicken or Beef for tacos; or Pork or Chicken Chili Verde, can feed your family of four.

So when I found out about the Del Real Foods Recipe contest, I figured why not join. Like I said, the Del Real meat entrees (Carnitas, Shredded Beef, Pollo Asado) have been a staple at our house.

Easy to Make Ropa Vieja

With Del Real Shredded Beef, making this Cuban classic, Ropa Vieja, is quick and easy.

Del Real Shredded Beef
1 small onion, sliced
1 bell pepper, sliced into strips
2 T. minced garlic
1 small can fire-roasted diced tomatoes

Saute small onion sliced until translucent, add bell pepper sliced into strips, garlic and fire-roasted diced tomatoes. Add Del Real Shredded Beef to the pan, combine and heat for a few minutes. Serve on top of white rice with beans and a side of fried plantains. Garnish with cilantro.
