My kids ask, “Is it made from scratch?” I’m no chef and they aren’t gourmands either, but they do appreciate classic homemade mac n’ cheese. Of course they’d eat them out of a blue box too but Mommy Mac N Cheese is always special. Made with love and usually from whatever pasta and cheese is available, so no two mac n cheese’s (macs and cheese?) are alike.
Here is a basic recipe I follow. I like to experiment with different kinds of cheese too. Right now the kids enjoy Mac n Cheddar Jack but tomorrow it could be Mac n Manchego. Anything goes.
2 cups milk
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups of shredded cheese of choice (Cheddar, Cheddar Jack etc)
1/4 teaspoon ground red pepper or Tapatio hot sauce (don’t tell me kids that I add this, but it does make it tasty)
1/2 (16-oz.) package elbow macaroni, cooked (or any pasta – the kids like penne and farfalle)
1. Whisk flour into butter o make a roux.
2. Gradually mix in the milk and cook,whisking constantly until thickened.
3. Add shredded cheese. Keep mixing and add salt, black pepper, and red pepper/Tapatio, if desired, until smooth. Stir in pasta.
4. Spoon pasta mixture into a baking dish; top with remaining cheese. Bake at 400° for 20 minutes or until golden and bubbly.
